In American Whiskey Recipes

One of the many fun parts of making our limited releases and Distiller’s Series spirits is that we get to experiment with some classic or new-to-us cocktails that we’ve never served in our tasting room before! One such cocktail is the Spring Penicillin, which has been a runaway favorite of ours this spring.

This cocktail is a take on the Penicillin, a drink that’s quickly become a modern classic despite the fact that it was created only 16 years ago by bartender Sam Ross. Originally made with scotch, honey & fresh ginger, we’ve updated this drink for spring by replacing the ginger with mint for a refreshing sipper, topped off with the smoky richness of For Peat’s Sake Whiskey.

Spring Penicillin

2 oz NSD American Whiskey
¾ oz Fresh Lemon Juice
½ oz Honey Simple
¼ oz Mint Simple
¼ oz For Peat’s Sake Whiskey

Shake first four ingredients with ice, then strain into rocks glass filled with fresh ice. Pour ¼ oz For Peat’s Sake Whiskey on top, then garnish.
