DISTILLER’S SERIES SPIRITS
We are always working on new spirits, and occasionally come up with creations that we are excited to share. We often bottle these spirits under our Distillery Series label, and those ones are only available here at the distillery. These products are often made only once, or on a very limited basis – check back often or you might miss out!
Here are some of our most recent offerings:
Peated Malt Whiskey
We’ve been making malt whiskey for many years, and from time to time we experiment with peated malt – this is the second batch we have released of peated malt whiskey, just in time for the 2020 holidays. This whiskey has a rich nose, with smoke, spice and a hint of salinity. On the palate, it is rich and layered, with oak, smoke and notes of earth, and a lingering, round finish. Delicious for a cold winter’s night.
This whiskey is 45% abv.
The Dearborn Gin
Since fall 2018, we have been serving and selling a great spirited collaboration – The Dearborn Gin, which we developed with our friends at The Dearborn Tavern in Chicago. This gin has a classic profile, with fresh juniper, bright citrus (we used fresh grapefruit, lemon and lime), and a hint of Irish heather. Of course, you can find this gin at the Dearborn, but the only other place you’ll find it is right here at the distillery.
Dearborn Gin is 45% abv and is available now at the distillery.
PAST DISTILLER’S SERIES SPIRITS
We like to create interesting, unique things. Here are a few of the distiller’s series spirits we’ve released in the last few years. Past editions have included things like a smoked version of our Tahitian Vanilla vodka, a malty genever, and many other quirky, delicious creations.
2020 Malt Whiskey Release
This whiskey demonstrates the style and flavor profile we look for in a superior pot-distilled malt whiskey. It has a rich, inviting nose of malt, spice, heather and fruit. On the palate, it is rich, smooth and balanced, with spice notes, candied fruit and tobacco, finishing with delicate notes of honey, vanilla and orange blossom. We made it with a 100% malted grain mash, fermented with commercial and wild yeast strains. It was aged no less than 6 years in full-sized, used bourbon barrels.
This year’s edition is 44% abv (88 proof), and is now sold out. Next one in March 2021!
One of the incredible botanicals in our Scofflaw Old Tom Gin is a very obscure, expensive flower from China called osmanthus. It adds a delicious fruity, floral, exotic finish to that gin that we have always loved. Well, we decided to see what happens when we use just that flower and make it into a delicious liqueur. It was pretty spectacular! This limited edition liqueur (just 101 bottles made) had bright floral & herbal notes, with a delicate finish. It is now SOLD OUT, but it was 40% abv.
Blueberry Gin Cordial
Taking inspiration from the great produce at our area farmers’ markets, we made a delicious sipping-style liqueur using fresh regional blueberries and our Distiller’s Gin No. 11. Layers of flavor, with bright, fresh fruit and rich botanicals. Delicious over ice, or with soda, but also fun to mix! Our Blueberry Gin Cordial was 40% abv, and is SOLD OUT.
This vodka resulted from a collaboration with one of Chicago’s great steakhouses, Benny’s Chop House. For many years, it was their house vodka – specifically designed to pair with their prime steaks in classics like a Vodka Martini, a Dirty Vodka Martini, or simply on the rocks. It makes amazing cocktails too, and we have a small amount of it remaining that we are glad to share. It is primarily a straight vodka, with subtle hints of white peppercorn, fresh citrus, and lemongrass. It was 40% abv (80 proof), and is now SOLD OUT.
A lesser known, herbal-style liqueur with caraway as a dominant flavor. We made this for fun, and enjoyed it so much we thought we’d share some of it as well. Delicious for sipping, and also for mixing – some classic old cocktails call for this obscure ingredient, and it plays well with other savory flavors. Our Kümmel was 35% abv, and is SOLD OUT.
Peated Malt Whiskey
We’ve been making malt whiskey for many years, and we experimented with some peated malt. We really like the results – rich, smoky and peaty, this whiskey drinks kind of like an Islay Scotch with some heathery undertones. Delicious for a cold winter’s night, to be sure.
