DISTILLER’S SERIES SPIRITS

We are always working on new spirits, and occasionally come up with creations that we are excited to share. We often bottle these spirits under our Distillery Series label, and those ones are only available here at the distillery. These products are often made only once, or on a very limited basis – check back often or you might miss out!

Here are some of our most recent offerings:

White Amaro

We did many experiments while developing Bokamaro, and one of them was delicious, but not quite right for that product. So, we stuck it in a barrel for awhile to see what happened, and we love it now. Sip it after dinner, or mix it with gin or whiskey – so many options! Our White Amaro is 35% abv, and is available at the tasting room now (as of May 2025).

Smokey Tahitian

Derek infused some delicious smoke notes into our Tahitian Vanilla Vodka, using a special process he developed with Lapsang Souchong tea. Deliciously different, and wonderful to sip. It makes a killer Espresso Martini, and adds intriguing notes to a range of cocktails. This spirit is 35% abv and available now (as of May 2025).

PAST DISTILLER’S SERIES SPIRITS

We like to create interesting, unique things. Here are a few of the distiller’s series spirits we’ve released in the last few years. Past editions have included things like a smoked version of our Tahitian Vanilla vodka, a malty genever, and many other quirky, delicious creations.

Kümmel

A lesser known, herbal-style liqueur with caraway as a dominant flavor. We made this for fun, and enjoyed it so much we thought we’d share some of it as well. Delicious for sipping, and also for mixing – some classic old cocktails call for this obscure ingredient, and it plays well with other savory flavors. Our Kümmel was 35% abv, and it is sold out.

B Vodka

This vodka resulted from a collaboration with one of Chicago’s great steakhouses, Benny’s Chop House. For many years, it was their house vodka – specifically designed to pair with their prime steaks in classics like a Vodka Martini, a Dirty Vodka Martini, or simply on the rocks. It makes amazing cocktails too, and we have a small amount of it remaining that we are glad to share. It is primarily a straight vodka, with subtle hints of white peppercorn, fresh citrus, and lemongrass. It was 40% abv (80 proof), and is now SOLD OUT.

Peated Malt Whiskey

From time to time we experiment with peated malt – we’ve released two batches of peated malt whiskey thus far. Unfortunately, the latest one is now sold out. It had a rich nose, with smoke, spice and a hint of salinity. On the palate, it is rich and layered, with oak, smoke and notes of earth, and a lingering, round finish. Delicious for a cold winter’s night. We have more aging, so stay tuned! This whiskey was 45% abv.

Blueberry Gin Cordial

Taking inspiration from the great produce at our area farmers’ markets, we made a delicious sipping-style liqueur using fresh regional blueberries and our Distiller’s Gin No. 11. Layers of flavor, with bright, fresh fruit and rich botanicals. Delicious over ice, or with soda, but also fun to mix! Our Blueberry Gin Cordial was 40% abv, and is SOLD OUT.
