In Dearborn Gin Recipes

It’s become a summer tradition here at North Shore Distillery to include some sort of riff on a Spanish-style Gin & Tonic on our summer menu. We always have a great time playing around with fresh fruits, herbs & spices, and (literally) showing them off in a beautiful, delicious cocktail. The large goblet-style glass allows us to add more tonic than we would on a classic G&T, and we’ll jazz it up visually with some fruit, citrus and other herbs or spices, depending on what we choose.

Warm weather calls for a bright, fizzy cocktail that’s easy to put together and delightful to sip on a hot day, so this style of drink is perfect. This summer’s Spanish Summer Tonic has a subtle red(rhubarb), white(tonic) and blue(berries) theme that’s a nod to the holiday, so it’s a great drink to accompany your celebration of the 4th!

Spanish Summer Tonic

2 oz Dearborn Gin
½ oz Rhubarb Simple*
½ oz Fresh Lime Juice
1 Lime Wedge
8-10 Blueberries
Fever Tree Tonic

Squeeze 1 lime wedge into a goblet, then drop into the glass. Add berries, rhubarb simple, fresh lime juice and Dearborn Gin. Fill goblet with ice, add tonic, stir and garnish with a lime wedge. Cheers!

*Rhubarb simple – simmer in 8″ per cup of fresh chopped rhubarb for 6-7 mins, then cool & mash rhubarb. Grate in a few inches of additional fresh rhubarb after cooling with a microplaner, then strain the syrup & refrigerate.
