This week’s cocktail is a riff on a riff on a classic Prohibition era favorite – the Bee’s Knees! The original cocktail is made with gin, fresh lemon and honey, and in the past we’ve riffed on that with the Maltese Falcon, using Malt Whiskey.
The Fly by Night takes the Maltese Falcon and adds egg white, bringing this cocktail into the realm of a luxuriously frothy sipper and highlighting Malt Whiskey’s notes of rich honey, spice and nuttiness.
Fly by Night
2 oz Malt Whiskey
¾ oz Fresh Lemon Juice
¾ oz Honey Simple
1 oz Egg White
2 dashes Angostura Bitters
Shake ingredients without ice, then add ice and shake vigorously. Strain into a chilled cocktail glass & garnish with bitters.
