Hmmmm.. we seem to be a bit rum-obsessed this summer, maybe because we’re still excited about the release of our two aged rums! This week, we are celebrating another fun Tiki cocktail, which is actually named for a real person. A great cocktail blogger, Doug over at The Pegu Blog, wrote up a summary of this drink’s history awhile back – check it out if you’re interested. You can find more here and here, too – some other fun blog posts about this drink. There have been many variations on the recipe, and we tried a few here before deciding on one we liked. Here was the winner:
Dr. Funk
2½ oz North Shore Doublewood Rum
¼ oz Sirène Absinthe Verte
½ oz Fresh Lemon Juice
½ oz Fresh Lime Juice
½ oz Demerara Simple Syrup
¼ oz Grenadine
Club Soda
Shake first six ingredients with ice; strain into ice-filled tall glass, Tiki Mug or other fun vessel. (If you have crushed ice, shake them with crushed ice then dump into glass). Top with about 1½ oz club soda, garnish with whatever you like – we like a sprig of mint and a lime wedge, but feel free to be creative with what you have on hand!
