This is the time of year where the herbs in our distillery garden that we’ve passed over on our summer menu are clamoring to be used – so this week cocktails at the distillery are all about basil! We’re using a basil simple syrup to make this drink, a riff on the classic Tom Collins. It adds a nice herbal depth to this refreshing long drink, great for sipping away the later days of summer.
Basil Collins
2 oz Scofflaw Old Tom Gin
¾ oz Fresh Lemon Juice
½ oz Basil Simple
Club Soda
Combine all ingredients in a Collins glass. Add ice, top with soda and stir. Garnish with a sprig of basil or a lemon curl.
