We’ve been reaching into our distillery garden quite a bit this August – the harvest has been plentiful, especially of the herbs planted back in the spring. The star of the show is our mint – we have a whole barrel full of the stuff, and it’s been growing apace! With this abundance of mint, we’re reaching back to one of the earliest classics in cocktail history.
The smash first appeared in the early 1800s, and was constructed as a mixture of spirit, sugar, water and mint. So this week we’re making this classic cocktail with Sirène Absinthe Verte – it has intense herbal flavors blend with the fresh herbal mint to create a bright, intriguing drink.

Absinthe Smash
1½ oz Sirène Absinthe Verte
¾ oz Fresh Lemon Juice
¾ oz Mint Simple
Shake ingredients with ice (with in a little extra mint, if you prefer) and strain into a chilled coupe glass. Garnish with a mint sprig.
