This cocktail is actually a riff on a drink we’ve previously had on our winter cocktail menu – the Midnight Sun! It’s been updated this year into a spring sipper, combining the deep spice of Aquavit with bright citrus, a hint of floral and finishing off with the perfect touch of fizz.
Midnight Fizz
1½ oz Aquavit – Private Reserve
½ oz Grapefruit Liqueur
¾ oz Fresh Lemon Juice
⅛ oz Hibiscus Simple
Club Soda
Shake first four ingredients with ice, then strain into a chilled coupe glass. Top with club soda and garnish with a grapefruit swath or wedge.
