The Tom Collins has always been a favorite cocktail of ours – it’s one of the classic gin cocktails, and customizable for any season. Currently we have this delightful Strawberry Collins on our cocktail menu, as well as a strawberry-lavender version available as a cocktail kit this week!
Strawberry Collins
2 oz Scofflaw Old Tom Gin
¾ oz Fresh Lemon Juice
½ oz Plain Simple
2 Strawberries, quartered
Club Soda
Muddle strawberries, simple & lemon together, then add gin and shake with ice. Double strain into a Collins glass filled with ice, then top with club soda and stir. Garnish with a lemon twist or a strawberry slice.
