February is a month for dreaming and romance — in the Chicagoland area we’re dreaming of the tropics and our Take Me to the Tropics Party, as winter begins its third month! And of course the briefest month also holds the romantic Valentine’s Day.

So this month we’re traveling to Paris with our Drink of the Month! This cocktail features the traditional French spirit of Sirène Absinthe Verte, full of herbal intrigue. Sweet citrus from North Shore Curaçao and creamy almond play off the bright lime to balance out Absinthe’s strong opening, and crisp ginger beer tops off the concoction. This cocktail has a lot going on, but it all combines into a bright botanical fizz with layers of fruit and nuttiness. While sipping this sparkling creation, it’s not hard to imagine yourself under the sparkling glow of the City of Lights.

Midnight in Paris

1 oz Sirène Absinthe Verte
1/2 oz North Shore Curacao (or Cointreau)
1 oz Orgeat (we’re using Giffard)
1/2 oz Fresh Lime Juice
Ginger Beer

Add all ingredients to a Collins glass. Fill glass with ice, then top with ginger beer and stir well. Garnish with a lime wedge or an orange swath — or both!
