We’re getting ready for our Pumpkin Fest this weekend, and also Halloween, so we’ve cooked up a fun recipe combining the flavors of a Pina Colada with Pumpkin. We give you the
ICHABOD-A COLADA
1½ oz North Shore Bourbon Cask Rum
1¼ oz Pineapple Juice
¾ oz Coconut Syrup (coconut milk + coconut cream + simple mixed together, in equal parts)
¾ oz Pumpkin Syrup*
½ oz Fresh Lemon Juice
Shake ingredients with ice; strain into chilled cocktail glass. Apply pumpkin stencil with Peychaud’s bitters, or add a cinnamon stick garnish.
*For Pumpkin Syrup, we combine 1½ cups pumpkin puree, 1½ cups sugar, and 1 cup water in a saucepan. Bring to a simmer, stirring often. Simmer 2-3 minutes, then cool completely and strain.
