Say that name three times fast! This fun tropical cocktail was originally dreamed up by the great folks over at Smuggler’s Cove in San Francisco, and it has a mouthful of a name – 21 letters long! – because it is named after the state fish of Hawai`i. This gin-based cocktail is well worth the effort — it combines the tropical notes of pineapple & lemon with the sweet nuttiness of orgeat and round, floral notes of our Scofflaw Old Tom Gin for a perfectly-balanced drink.
Humuhumunukunukuapua`a
2 oz Scofflaw Old Tom Gin
¾ oz Pineapple Juice
¾ oz Fresh Lemon Juice
½ oz Orgeat
2 dashes Peychaud’s Bitters
Shake ingredients with crushed ice, then pour entire contents of shaker into a goblet or tiki mug. Garnish with a lemon twist, umbrella & any other fun garnishes you have on hand!
Pitcher Recipe (for 8 drinks):
If you want to make these in bulk in a pitcher, you can simply multiply the ingredients by the number of servings you’re aiming to make, and add 1.25 oz of water for each one. Then, you can skip the shaking! Serve over fresh ice – it’s best not to put ice into the pitcher, as it will further dilute the drink. As you probably know, part of a great cocktail is a bit of dilution, so that water helps bring everything together and balance it all out. Below is a recipe for a pitcher of 8 drinks:
16 oz Scofflaw Old Tom Gin
6 oz Pineapple Juice
6 oz Fresh Lemon Juice
4 oz Orgeat
16 dashes Peychaud’s Bitters
10 oz Water
Combine ingredients in a pitcher. Serve over fresh ice & garnish with an orange or lemon swath.
