In Rum Recipes

We’ve got some cocktails on our menu right now that are great for the winter, with rich spice notes and deeper flavors. A new one is the Fall of Kahiki, with our Bourbon Cask Rum, falernum, fresh lime and demerara simple. Falernum is a clove-lime-ginger syrup that often appears in Tiki drinks, and demerara is a more rustic sugar – it has a touch of molasses and caramel in addition to the typical sugar sweetness. Both of these ingredients play wonderfully with the rum, and the lime juice adds balance.

FALL OF KAHIKI 

1¾ oz Bourbon Cask Rum
½ oz Fresh Lime
¼ oz Demerara Simple
¾ oz Falernum (we use BG Reynolds)

Shake ingredients with ice, strain into ice-filled rocks glass. Garnish with a lime wedge.

PS, the name is a reference to the famous Kahiki Supper Club in Columbus, OH – it was one of the most opulent and famous Tiki-style restaurants, and it stayed open long past the time that most Tiki-themed venues had closed – it was finally demolished in 2000.
