2023 American Malt Whiskey Release
This year marks the sixth year we’ve released our malt whiskey by the bottle, and the 12th year we’ve served a new expression in our tasting room. Since 2012, we’ve been serving our malt whiskey in our tasting room starting on the weekend closest to St. Patrick’s Day. Our malt whiskey is in the style of some of the finest small-batch Irish whiskeys we have had, so we thought it was a fitting time to share it with the world.
This year’s release is delicious, and distinctly different from past releases (which were also delicious). Each year’s version reveals new layers of complexity, and often goes in different directions as we discover our current feelings and preferences at the time we’re blending. This year’s edition is round, with rich fruit and honey tones and notes of malt and jasmine. It has a long, delicate finish meant to be savored.
About the Whiskey
For this whiskey, we started with 100% malted barley. We fermented the grain in-house with a proprietary yeast blend, and then distilled through Ethel the Still. Then, we filled some full-size used bourbon barrels with it, and let them sit in our distillery on our house-made racking system. We moved them when we moved to our new location a few years ago, even.
Like past years, this particular whiskey has been made with a blend of our aged barrels – the youngest in the mix is 7 years old.
This whiskey demonstrates the style and flavor profile we look for in a superior pot-distilled malt whiskey. Our 2023 blend has a rich nose with hints of honey, heather and pear. On the palate, it leads with delicate notes of apricot, finishing with a perfectly layered combination of honey, malt, and jasmine. Smooth and incredibly sippable.
