In Recipe - Doublewood Rum

In writing this post, I discovered that we’ve actually used this name before, but for a very different drink! Since this is the name on our menu right now, I’m sticking with it despite that, but calling it Tropic of Paradise #2 for this post since the original is still posted here.

This is a fun, summery, tropical drink with rum, pineapple, lime and ginger notes. The hotter it is outside, the more popular it seems to be – since this past weekend was a scorcher and summer has arrived, it seems like the right time for this one.

Tropic of Paradise (#2, ca. 2018)

1¾ oz Doublewood Rum
¼ oz Fresh Lime Juice
1 oz Pineapple Juice
Ginger Beer (not too sweet, with a touch of spice)

Add first three to a tall glass. Add ice, top with ginger beer, and garnish with a lime wedge.
