Tasting Notes

This delicious whiskey represents nearly twenty years of study, experimentation and development, and we’re thrilled to finally be ready to share our bourbon with you.

Here are the official tasting notes:

Nose: vanilla, allspice, notes of oak and a hint of dried fig
Taste: full, rich and warming; enters with deep spices and apple, finishing with notes of white peppercorn and maple

This spirit will initially be available at the distillery starting October 4th, and will be introduced to other retailers soon after

Production Notes

We started with a high-rye sour corn mash (78% corn, 22% rye), which we fermented in-house using a proprietary yeast blend. Then, we distilled it through Ethel the Still, and aged this spirit in new full-sized American oak barrels. The barrels have been resting for at least 7 years in our custom racking system, and blended together to create our signature flavor and style.

The youngest whiskey in this blend is 7 years old, and it bears a 7-year age statement on the label.

North Shore Bourbon is 46.5% alcohol by volume (93 proof)
