We’re doing it.
We’re making boozy popsicles.
And frozen drinks.
And grown up ice pops…
And we’re doing it all month for the month of July. Since June has been all about tonic, we figured we’d do a crossover option for the last post this month – it’s BOTH made with tonic and it’s a popsicle!
Sol & Tonic Popsicle
1½ oz Sol Chamomile Citrus Vodka
8 oz Tonic Water
½ oz Fresh Lime Juice
2 Cucumber Slices, cubed
In a measuring cup, muddle cucumber with Sol. Add tonic, lime juice, and stir well. Pour into molds and freeze until set.
Makes 4 small Popsicles
* Optional – If you prefer a smooth texture, strain the mixture before you pour it into the molds
*Also Optional – if you want slices in your popsicles like they are in the picture, use a tiny bit of simple syrup to attach them to the mold, and freeze it briefly, before you pour in the liquid for the popsicles.
