In Gin No. 6 Recipes

This riff on a classic Collins is a great cocktail for the seasonal transition. The plums are a sweet end-of-harvest fruit, and the ginger hints of the cold weather to come. Enjoy!

Little Jack Horner (aka the Spiced Plum Collins)

1½ oz Distiller’s Gin No. 6
¾ oz Fresh Lemon Juice
½ oz Spiced Plum Syrup (see below for recipe)
Dash BittercubePlum collins btl Orange Bitters
Club Soda

Shake gin, lemon juice and syrup with ice. Pour into a collins glass filled with fresh ice, and top with club soda. Garnish with a slice of plum or a lemon twist.


Spiced Plum Syrup

2 ripe plums, cut into 8 chunks
1 1/2 cups white sugar
1 cup water
3-4 ginger root medallions (peeled and sliced into ¼” slices)
1/8 tsp Peppercorns
1″ cinnamon stick

Heat all ingredients together on the stove, stirring often, and simmer on low for 10-15 mins, until the plums are soft. Let cool, strain out the solids, and store in a clean jar in the fridge for up to a month.
