For our new spring menu, we’ve brought in some brighter, more botanical flavors. This particular drink involves layers of lavender. We infuse and distiller our Mighty Gin with lavender blossoms, and we’ve also created a simple syrup made of honey and infused with lavender. Finally, we’ve added some bright lavender top notes from the use of Scrappy’s lavender bitters.
2 oz Mighty Gin
¾ oz Fresh Lemon
¾ oz Lavender Honey Simple
1 dash Scrappy’s Lavender Bitters
Shake ingredients with ice; strain into chilled coupe glass. Garnish with a lemon swath or twist, if desired.
Lavender Honey Simple: Combine 1 cup clover honey, 1/2 cup water, and 1 tbsp dried lavender in a saucepan. Bring to a simmer, simmer for 2-3 minutes. Cool completely, then strain out the lavender. Store in a glass jar in the refrigerator up to 1 month.
