To make the Rosemary-Honey Simple for the drink, refer to the Honey Simple recipe on our Simple Syrups page. Before cooling, remove the leaves from the stem of 1-2 sprigs of rosemary (depending on the desired potency) and simmer in your simple syrup for 5 minutes, then cool and strain out the solids.
Add the first three ingredients to a Collins glass. Fill the glass with ice, top with tonic and stir briefly. Garnish with a lime wedge.
